A divine and well-loved antique French copper 'daubière' from the Provencal home of acclaimed cookbook author Patricia Wells. The piece was used often in her cooking classes (which she taught for over thirty five years) and stored on Julia Child’s stove (from her home La Pitchoune in Provence). Patricia and Julia and their husbands were dear friends.
Patricia uses the daubière to cook beef or lamb stews and instructs her students to place cold water or ice cubes over the top lid which condenses to make the interior more humid. Copper is the preferred choice of Patricia, and she regularly has her pots and pans re-tinned as needed.
The daubière is the modern (that is, late nineteenth-century) version of the seventeenth-century (and earlier) braisière, a lidded pan used for cooking stews or braising meats in a fireplace in a manner that mimics cooking of an oven. The name derives from the fact that they were used for cooking a “daube ” - a French slow-cooked stew, usually with beef. With much to its history, this piece is the perfect choice for any French food lover’s kitchen.
