A vintage pair of classic white French soufflé dishes from the sunny kitchen at Chanteduc, Patricia Wells’s Provençal home. From her personal collection, they reflect a cook’s eye for usefulness and clear design. Patricia explains, “I have friends whose children come to Chanteduc every year, and each year we make something different. I am not a big soufflé person, but the boys wanted to make one, so I had to go out and buy the dishes. I made little aprons for them when they were little boys, and then I had to make big aprons when they became big boys!”
In white glazed porcelain, each dish features crisp vertical fluting and a softly rounded rim. The glaze is bright and smooth with light signs of careful use, and the sturdy walls promise even baking. Their generous, family-friendly scale suits sweet or savory soufflés, as well as gratins or baked rice, and they present handsomely as a matched pair. True to Patricia’s intelligent simplicity, they live happily on open shelves beside mixing bowls, or come straight to the table heaped with lemons and limes from the market.
