A large antique French daubière (braising pan) from the main kitchen at Chanteduc, always on the shelf and ready to use. Patricia explains, “I thought this one was the biggest daubière I would have and then at Christmas, an even bigger one was under the Christmas tree!” Branded A. Simon, Paris, the historic supplier founded in 1884 at 48 Rue Montmartre and known for professional-grade copper often made by top French makers such as Mauviel, it is made in France and about 30 years old. This is a lovely example of a beautiful large braising pan in hammered, tinned copper. Rectangular and very heavy, it holds steady, gentle heat for daube provençale (Provençal stew) and other long braises. The tin lining is classic and practical for daily cuisine; the lid sits clean and true. Copper rivets and sturdy brass handles are set with confident spacing, and the hammered surface has a warm, even patina that catches the light. Patricia still uses it for daube and stews, a reflection of her intelligent simplicity and generous hospitality shaped between Paris and Provence.
